This month, Journey’s Provisions is dedicated to “eating the rainbow,” which we intentionally chose to help kick-off Week 1 of our Taste of Summer Challenge: The Rainbow Palette!
Whether you need a dinner or quick lunch (with “kid-friendly” options) idea or are hosting a summer gathering, we hope you will enjoy these:
- Rainbow Sheet Pan Dinner – With its deep purple potatoes, earthy beets, and sweet yellow bell peppers, this meal turns simple weeknight prep into an effortless celebration of seasonal variety.
- Rainbow Vegetable Pinwheels – These pinwheels are layered with creamy hummus and packed tightly with all the colors of the rainbow, including shredded carrots, baby spinach, and purple cabbage. They are great for carrying for lunch, to a picnic, and/or sharing at a summer gathering.
- Rainbow Charcuterie Board – Featuring a colorful (and completely customizable!) arrangement of plant-based ingredients, this is an enticing way to gather a group together, encourage lingering conversations, and share the bounty of the season.
- Healthy Fruit Dip with Yogurt – Instead of using agave as one of the dips on your charcuterie board (recipe mentioned above), consider using this tastier and more nutrient rich yogurt dip (using plant-based yogurt) recipe.
